What this display means
On many Sub-Zero units, especially the widely installed 500 and 600 series, the temperature display doubles as the machine's way of speaking. When it blinks a number such as 30, 40, or 50, often alongside the word SERVICE, the unit is not showing you a temperature. It is showing you a code: its own diagnostics have caught a fault in one of the refrigeration systems and logged exactly where.
The temptation is to power cycle the unit until the blinking stops. Sometimes it does stop, and that is the trap: the code clears, the fault stays, and the machine quietly continues wearing itself down until the failure is much larger.
